Blue Corn Waffle w/ Peanut & Vanilla Bean Butter

Waffle Ingredients

  • 300g cornbread dry mix

  • 200ml milk

  • 60g butter (melted & slightly cooled)

  • 1 large egg

  • 2tsp vanilla extract

Butter Ingredients

  • 1/4cup unsalted butter (softened)

  • 2 1/2tbsp peanut butter

  • 1/4tsp ground vanilla beans (or extract)

  • 1/2tsp honey

  • pinch sea salt

  • (optional) add some nuts of choice ~ we used caramelized walnuts

Instructions

  1. For butter: Mix all ingredients together until well combined, set aside.

  2. For waffles: In a bowl whisk together milk, butter, egg and vanilla extract. In another bowl measure out dry ingredients and form a well for the wet ingredients. Pour the wet into the well and whisk until incorporated and fairly smooth. Ladle the mixture into your waffle maker and cook based on the model’s instructions.

  3. Top the cooked waffle with a dollop of your prepared butter, drizzle maple syrup (whiskey barrel aged is our favorite for this!), and add any other toppings you desire. Enjoy!
